1. Will the FMS operate properly with this system?
2. Can I use Spektrum DX5e transmitter for simulator?
3. How best to bind transmitter to computer for proper function?

Ren,
You will need to run Windows XPas a guest operating system on the Mac.
The DX5e can be used with many simulators, but you need to purchase a sim cable that usually works with USB.
I have no direct experience running FMS on a Mac. Perhaps someone else will respond too.
