Biplanes, canards etc : how simulated?

Just wondering about how FMS represents biplanes and canards -- the .par file seems to contain nothing that would represent such features.

Also, how does the .par file include the vertical position of the CG ?

Edit: Oh, and where can I find a definitive explanation of the parameters found in the par file?

When it comes to CG (center of gravity?), I have the feeling that it's in x-y-z coordinate (0,0,0) in metasequoia. I'm not sure about this, but this is where I placed CG on my models.
