Joysticks only have 4 analog channels. Also I believe FMS only responds to 4 channels. So there's no point using any more.

the joystick interface in the Windows API supports up to 6 axes and they all can be used in the FMS (at least on the first joystick).
There is no way to use 7 channels on one joystick with the FMS. More the 6 channels can be accessed only via 2 joysticks.
