'Exp' stands for 'exponential'
On some transmitters you can define a stick behaviour as exponential. This way the stick (actually it's the axis) is less sensitive around the centre point and more sensitive near the extreme points.
This gives you a finer command on the aircraft during a 'normal' flight and a rapid reaction to the stick for aerobatics.
It is always recommended to assign 'exp' to the ailerons and the elevator.
