Many of the planes are realistic. The planes that come with the game are. Nearly every fighter jet and pro driven fighter I've found fly very realistically. Almost all the gliders I've found are incredibly realistic.
Spiraling out of control is due to pilot error and over-correction, not plane design. ANY plane will stop spiraling if all the control surfaces return to neutral. This was learned back in the 50s.
In short, if the plane is out of control, let go of the sticks and it will begin flying straight again.
If you want a plane that flies like shit and doesn't do what you tell it, just mess with the par file, or don't calibrate your controller.
As for taxiing, I have no idea why some planes go 2ft and crash, and other can roll around all they want.
