What is Sample Time?

Please could somebody tell me what Sample Time is, under Simulation Options in FMS Alpha 8.5 and what is the correct settings.

What exactly is Simulate empty tank/accu for?

Sample time slows down the sim speed.Play around with it.I slowed down the speed when I was learning to torque roll.Once i could do it i sped it up again.Sim empty tank,makes you run out of fuel after a while so the motor cuts out.

Thanks very much for your help, what is the most realistic sample time.
The only problem is my aircraft's engine stops as soon as I put the fuel empty option.
