I have the same E Sky Sim controller and have used it on a few different Win XP based PC with no issue being recognized as a USB HID (Human Interface Device). I should be a simple P-n-P set up in Windows 2000, XP or Vista.
I'd suggest that you may have botched the initial P-n-P set up, so you'll need to delete it from the "Hardware" listing in the "Control Panel". Just make sure you're sellecting the right piece of hardware (not your USB mouse, keyboard, etc) and just highlight it and click on remove from the menu.
Then reboot your PC and reconnect the E Sky and watch the pop-up windows as XP recognizes the device.
Any RC Plane, Heli or Car ... give me 10 minutes and I'll crash it.
