Paint-"7" a few white spots here and there.
Controlling-"10" Really nice
Sound-"10" Nice choice
Zero n°2
Paint-"9" Good color scheme.
Controlling-"8" a bit annoying
sound-"10" Nice choice
Your Website: Good, but i don't really know what anything... I'm an Ignorant American. But you do have other really good models and the landscape is cool.

I am new to FMS but am a quick study.
What I would like to know is how to open a plane file for use with FMS such that I can modify the colors and or patterns on the plane.
What file would I open and how would I open it.

Most FMS planes constist of an .X-file which contains the 3D-geometry and one or more .BMP-files that contain the surface-'finish'.
Simply open the bmp in an graphics-editor such as PaintshopPro or Photoshop.
